Curry Powder

curry powder 1 cup channa dal 1/2 cup urud dal 8- 10 large red chillies whole 1/4 cup coriander seeds (dhaniya) a pinch asafoetida METHOD Heat 1/4 tsp til oil fry all the ingredients on a low flame ,the masala get slightly luck warm .remove from fire . Add 1 tsp salt and grind to a fine powder. This masala powder is add to cooking any vegetable curry or koodu,or fry vegetable,Add 1 tsp of this curry powder Chutney powder 1 tsp fenugreek seeds 10 - 15 large red chillies whole 1 tsp mustard seeds 1/4 tsp Asafoetida1 1 tsp salt METHOD Heat little oil and fry all the ingeredients expect salt in a low fire .when it get luck warm remove from heat Grind with salt to a fine powder and store. This powder is used to make all kinds of chutneys with tomatoes, egg plant, tamarind etc.

Chicken Mutton Masala Powder

Chicken Mutton Masala Powder Ingredients: 200 g Coriander seeds 25 g Cummin seeds 5- 8 Cloves 4 -5 black Cardamom , 4-5 green cardamom, 10- 15 Red chillies whole 25 g Poppy seeds 1 tsp pepper corn 10 - 15 Cinnamon sticks- 25 g Saunf 1 /4 cup Curry leaves for flavor METHOD Heat a karai or pan ,Roast all ingredients one by one (except poppy seeds) till golden brown color. Grind all ingredients together to a fine powder and store . Chicken Mutton Masala Powder-2 1 cup coriander powder 1/4 cup red chilli powder 1 tsp pepper corn 2 tsp saunf 2 tsp cummin seeds 1-2 tsp turmeric powder 4-5 green cardamon 3-5 black cardamon 2-3 cinnamon stick 2 tsp garam masala powder 5-10 garlic cloves METHOD Grind all the ingredients together to a fine powder and store.

DOSA,IDLI POWDER

DOSA/IDLI POWDER; This chilli powder used with dosa and idli,this powder should be slightly coarsed .The quantity of chillis and dals can be increased or decreased according to taste Make large quantity and store in a bottle ,when it used take 2-3 tsp this chilli powder and add 1 -2 tsp sesame oil or ghee ,or 1/4 tsp lime juice,serve with dosa or idli. DOSA /IDLI POWDER Ingredients 100 gram red chilli whole 5-6 tsp black urad dal(blackgram dal) 3-4 tsp channa dal(Bangalgram) 1 tsp musterseeds 1 pinch of asafoetide 1 tsp seasame oil METHOD Heat oil and fry red chilli whole,keep aside and add dals fry for few minutes it get reddish in colour add asafoetide ,fryed red chilli ,and salt ,remove and cool it Make a powder in a mixer in a slightly coarsed form. GARAM MASAL POWDER

Garam masala powder Ingredients 50 g jeera (cummin seeds) 15 g cinnamon (dal seeni,patthai) 10 g black cardamom (Yelakkai) 10 g cloves( Lavangam/Krambu) 10 g bay leaves 5 g black pepper corns (milagu) METHOD sun light or heat all the ingredients slightly so that they do not have any moisture Heat kadai roast all the ingredient's till it becomes brown .keep the flame simmer and roast all till it become brown not black. remove and cool Grind together all the ingredients to a fine powder.

MASALA POWDER

Masala powder,Curry powder, is a spice mixture. It is commonly used in Indian cuisine.Most of the Indian cuisine like rasam ,sambar,all vegetable ,non vegetable curry are used many variety off powder.This masala powder are mostly all spices and pepper,red chilly ,and coriander leaves are used. Mostly all the the south are North India masala powder .Black pepper corns are used commonly. Those day we prepared in home.we put all the masala,and spices in the hot sun for 2-3 day.(This sun -dried ,utilizing the heat of the sun ,to remove the moisture.Removing the free moisture from this spices,it can kept for longer time.) and take to the chakki..I remember i went with my grand ma.There was so long queue.we patiently wait and powdered the masala .That time i live in joined families their was 15 - to 20 member so they powder it 1 or 2 kg .It comes only for 1-or 2 month .My period of time i prepared in mixer grander. It comes 1 to 2 months .Every 2 or 3 month it is duty of making masala powder...

RASAM POWDER

Rasam powder Ingredients 4 cup red chili 1 cup coriander seeds 100 g cumin seeds(jeera) 50 g pepper corns 50 g Fenugreek seeds(mathi seeds) 25 g mustard seeds 1/4 t asafoetide powder 1 t turmeric powder 1/2 t salt METHOD Heat karai. Roast first Fenugreek seeds fry golden brown. and add pepper,coriander seeds,jeera,mustard seeds ,mustard seeds cracked add red chilli and add 1/2 t salt fry for few minutes in slow fire.without oil.Remove and add the asafoetide powder and turmeric powder.Mix well . cool it and grind all the ingredients in a mixer Grinder to form a fine powder.store in a airtight container.
