Coffee is prepared from the seeds of the coffee plants.
Two varieties of seeds are used,the flat variety called coffee Arabia and the round variety called fibre.The fibre is more expensive and a delicate flavour.the Arabia gives a strong extraction .
THE BLEND OF THE RATIOS OF 1:2 IS FOUND TO BE GOOD COMBINATION.
Coffee is often roasters and ground at home .A small quantity should be roasted at a time so that the beans can puff out well.The temperature should be high initially and lowed when the seeds begin to crackle.If the temperature is high in the latter stages ,some of the volatile substance aroma of good coffee is lost.
The roasted beans shout have puffed out well and should be capable of easily being crushed with the hand and the inside should be uniformly brown.Over roasting turns the coffee seeds black and the resulting coffee is very bitter and lacks a good flavour.

The coffee powder should be store in clean and dry airtight containers preferably made of glass.
MAKE A COFFEE POWDER

Take 2 cup coffee seeds

Heat a heavy bottom karahi roasted the coffee seeds ,golden brown.


Remove from fire ,cool it .put it in a blender make a coffee powder.store the coffee powder in airtight containers.

Make a coffee

Ingredients

1 1/2 t coffee powder

1 1/2 cup hot boiled water

75 ml hot milk or to taste

2-3 t sugar or to taste

METHOD

Clean and take a coffee filter .

boil the water .

Fill the upper part of the filter with coffee powder.close the upper container over the lower one.
Pour boiled hot water very slowly. Close the lid and allow filter for 10 -15 minutes the decoction to collect into the lower container.

Take one clean cup add the coffee 3 -4 tablespoons decoction .and add the hot milk and sugar .stir well.

serve hot with snacks .


If you want strong coffee add decoction.Depending on how much of decoction, milk and sugar .
If you have not a filter

Boil 2 cup of water in a pot .

Take 1 2/2 t coffee powder in a muslin cloth or muslin bag tided.put in the boiled water bring to boil 5-10 minutes till the water reduced little ,Remove from fire and closed keep on few minutes.


take out the muslin bag and squeeze out water.keep few minutes.


use as a coffee decoction.


or take one cup ,put on the cup tea strainer put 2 -3 t coffee powder .pour hot boiling water and close another cup on top it ,stand till the decoction filtered it use a coffee decoction.

PANAGAM

PANAKAM Ingredients 1 big size jaggery(100 g) 1 small size lime 1 small bit dry ginger (chukku) 2 cardamom 2 cup water a pinch of salt METHOD Dissolve jaggery in 2 cup of water and filter and add a pinch of salt and lime juice. Powered the cardamam and dry ginger. Add the cardamom powder and dry ginger powder in the juice Cool in a refrigerator and add ice cube and serve.
