MUTTER PANEER

MUTTER (PEAS)PANEER . Ingredients 300 g paneer 200 g peas 2 onion 1/2 green chilli 2 Tomato 50 g Tomato puree 1 t Ginger paste 1 t Garlic paste 1 t Red chilli powder 1/2 t coriander powder 1/4 t Turmeric powder 1 t Cumin 1/2 t Black pepper powder 1/2 t garam masala Oil 2-3 t salt to taste 3 t cream 3t 3 t Coriander leaves chopped 3T Water 2 cup Method ; 1. Boil the mutter for few minute .drain the water keep 2 Cut paneer into cubes. and fry paneer lightly in oil. 3. Chopped tomato,green chilli,onion . 4, Take one chopped onion,green chilli,cumin,turmeric powder,pepper powder.make paste. 4. CHENNA MURKI

CHENNA MURKI Ingredients 200 g paneer(cottage cheese) 100 g sugar 1/4 tcream of tartar Kewra essence a few drops water 4T METHOD; Cut paneer into small cubes. Heat water and sugar to a syrup of 1/3 consistency. Add cream of tartar to syrup and remove from fire. .Add the paneer cubes and leave for 5 minutes .Start cooking again and cook with constant stirring till the sugar coats the paneer pieces. .Remove from fire and add essence. Continue stirring till the sugar recrystallizes and the cubes separate out.

PANEER PAKORAS

PANEER PAKORAS Paneer Pakoras Ingredients 100 G paneer Garam masala a pinch 1/2 T Chilli powder 1/2 T Amchur powder Asafoetida(hing) powder a pinch oil for deep frying For the batter 100 G Besan 1/2 T Garam masala Ajwain a few grains salt to taste oil 1/2 water approx 3-4 t Method; 1 . Prepare the besan batter. (sieve the besan in a bowl. make a well in the centre. and pour half the water in to it.mix together and beat well gradually add the garam masala,salt,ajwain,and oil.Keeping the batter slightly thick.Keep covered for 20 minutes to swell up.) Cut the paneer in to 5x5 cm ,1 cm thick slices. Make a slit half way(cross wise) through the slice of paneer and insert a little of spices mixed together in to it. KADAI PANEER

  KADAI PANEER Ingredients 100 g Paneer 100 g Onion 100g Tomato 2 Capsicum Ginger 1/2 piece Garlic 2 small clove 2 t Tomato puree 1 t Chilli garlic sauce 1T ghee or oil 1/2 t pepper powder 1/4 t Red chilli powder 1/8 t Garam masala powder Salt to taste Method; .Cut onion ,capsicum, lengthwise in to thick slices.  chop tomatoes, ginger, and garlic finely. Heat oil in a pan .Saute capsicum and remove. Saute onion,and ginger,garlic and cook for 3-4 minutes Add chopped tomatoes ,capsicum and cook till softened. Add tomato puree and chill ,garlic sauce and seasoning. Cut paneer in to 1/2 thick triangles and put in to above mixture and cook for 3-4 minutes springle garam masala on top.

PANEER SCRAMBLED EGG

Scrambled Egg paneer Ingredients: 1 Egg 1 t Milk 1 t Butter 50 g paneer Green chilli 1/2 (chopped) Onion 1/2 (chopped) Salt and black pepper to taste Method 1 .Beat the egg lightly, add milk and seasoning salt and pepper and mix. 2. Grate the paneer small crumbs. 3. Melt the butter in a frying pan,put the chopped chilli,onion,slightly fry,and add paneer crumbs.fry for few minutes. 4. Pour beaten egg and cook with slight stirring till it starts setting. 5. Serve hot on a hot buttered toast.

PANEER KORMA PANEER KORMA Ingredients 300 gm paneer 1 cup coconut grated 3-4 onions 4-5 green chilli 4-5 cloves,garlic ginger 1 piece curds 1 cup jeera 1tsp 1 tsp chilli powder 1 tsp turmeric powder 1 tsp garam masala powder 4-5 cup water 4tbs ghee salt to taste Method. Chop green chilli, 2 onions.  Grind to a paste 2 onion,garlic,ginger,jeera,and the coconut. .Fry paneer cubes in little oil. Heat oil and fry the chopped onions ,greenchills.turn golden brown add the coconut onion paste ,turmeric powder,chilli powder,garam masala powder,and salt and fry for few minutes. Add the beaten curds ,cook for 2-3 minutes and add fried paneer.add the water cook for 10 -15 minutes in slow fire. Garnish with curry leaves,and coriander leaves and serve . PANEER KHEER Paneer kheer Ingredient; 500g Milk 50 g Paneer 2-3 tsp Sugar 2-6 Almond 6-7 raisins 1-2 drops Kewra essence Method 1.Cut the paneer in to very small cubes and cook in milk on slow fire stirring occasionally till the kheer thickens. 2.Add sugar and give one boil. 3.Remove from fire and add essence. Serve cold garnished with shredded almond and raisins.

PANEER MASALA CURRY Ingredients; 300 gm paneer, 300 gm potatoes 300 gm peas 5 tomatoes 4 onions 4 green chillis 1 piece of ginger 4 garlic 1/2 coconut paste or coconut milk 1/4 cup 1/2 t jeera 1 small cinnaman 1 t pepper powder , 1t chilli powder, 1t coriander powder, 1/2 t turmeric powder 2 tbsp ghee 2 red chillis 1 tsp mustard seeds salt taste   METHOD;   Cut potatoes in to small cubes. Chopped green chilli,ginger.garlic,   Cut onions lengthwise. . Grind the coconut,jeera,cinnamon with sufficient water. .Heat oil fry the potatoes,peas, green chilli,ginger, and garlic ( 5 minutes.) SHAHI PANEER Ingredients; 100 g paneer 1-2 t Butter /Desi ghee 2-3 Onion 1 small piece ginger 1 green chilli 3 tomato 1 Black cardamom (crushed) Salt 1/2 t 20 g Curds 1 t red chilli powder 1/4 t Black pepper powder 1/4 t garam masala 1/4 t suger 2 t Tomato sauce 1 t Cream few Coriander leaves Method Chopped onion,gree chilli ginger, and tomatoes small piece. PANEER PERPARATION

PANEER Paneer is a milk food.It has lot of protein ,calcium.Good for all age. Easily available in market.thous day per pared in home.While you can make slabs of paneer at home ,by curdling the milk.Using either lemon juice,vinegar,citric acid,curd or whey,draining the solids and pressing under a weigh.It difficult to get the same texture as that ready made.The milk is heated to a high temperature ,stirred though out the heating time then,the curdling ingredient add to it.it is drained,put in containers and run through cold water to remove excess whey and to give a softer texture to the paneer.Since it is cooled immediately it also remains softer -the cold water arrests the heating process which would otherwise make the paneer tough and maybe even stingy. CHILLI PANEER WITH MUSHROOMS Chilli paneer with Mushroom Ingrediends: 300 g Paneer 100 g Mushrooms 3-5 Tamotoes 1 capsicum 2 Onion 2 t oil or ghee 1/2 Cup cream 1/4 t Turmaric powder 1/4 Garam masala 5-6 Cashewnuts few coriander leaves saltand red chilli powder to taste METHOD Cut paneer in to cubes and fry little in oil ' Cut the capsicum in round slice remove seeds. Chopped onion lenthwise and tomatoes and mushrooms Grind the cashewnuts in a paste Heat the oil.Saute the capsicum,and mushroom and cook for a while remove and keep aside. In the same oil saute the onion till transparent. Add turmaric powder,redchilli powder,salt,cashewnut paste,cream.mix well and simmer on low heat cook for a while and add the paneer,capsicumand mushrooms .mix and cook for few minutes and last sprinkle the garammasala and chopped coriander leaves. serve hot.
