Zimikand,Yam

ZIMIKAND, YAM



YAMYam,Elephant,in English(Amorphophallus Campanulatus)Suran -Marathi,Zmikand Hindi,Panjabi.Kannada Suvarna gadde ,Tamil Senai kizhangu,Telgu -Kanda dumpa,Malayalam Chena.Other name Arsaghna valukand.
This vegetable have 100 g 78 ,Moisture,6 mg Carbohydrates,30 mg Calclum,40 mg Phosphorus food.

Before cooking this vegrtable must be washed thoroughly and avoid sandy and catching throat itching,
Wash and peel cut the skin and cut it in cubes,take a bowl add salt and butter milk and soak this vegetable 10 - 15 minutes.or soak in a lime water with salt .Drain and use any recipe.This vegetalble is look red and yellow,white.yellow white is become old it get more itcing in throat.

yam fry
(Sanai kezhangu varuval)
Ingerdients;
500 g yam (sanai kezhangu.)
1/2 t red chiili powder
1/4t coriander powder
1/4t turmaric powder
2- 3 T curd
2- 3 carlic cloves( chopped finely and mashed )
salt to taste
Method
  • Cut the skin and wash the yam.
  • Cut first large cube and cut squre cube or lenthwise.
  • Take bowl put 1 t salt and butter milk or lime juice .soak this veglable in this water.keep on few minutes.Drine water.
  • Mix all the masala with curd and garlic paste.and salt,
  • Marenate for few minutes.
  • Heat fat in a pan.
  • Add the marenate yam and fry well.
  • Add some water and mix well cook for few minutes,till the water dry it .
  • Fry for a few minutes till the yam gets well coated and led cook on very low fire for few minutes till crips,
  • serve hot.
DUM YAM
Ingeredients
500 g yam
2 onion
1 small piece ginger
1/4 t Amchur powder
1/4 t jeera powder
1./4 t red chilli powder
1/4 t coriander powder
1/4 t garam masala
one pinch of turmaric
2-3 t oil,Salt to taste

Method
  • Cut the skin and wash cut it in large cubes soak in butter milk water with salt.Drain keep aside
  • Chopped the onion,ginger very small pieces.
  • Heat fat in a pan put the yam fry for few minutes.take it out.
  • And add ginger,onion ,all the spices and mix well fry for a few minutes and add fry yam. till the yam gets well coated and Add 2-3 t water or coconut milk.and cooked.
  • Let it cooked for 5 -10 minutes,It well cooked, keep on low fire for few minutes it get dry,
  • serve hot

yam masiyal
Ingeredients
500 g yam
2-3 channa dal
1/4 T red chilli powder
1/4 t mustard seed
few curry leaves
1 red chilli whole,
sat to taste
2 carlic
Method
  • Wash and cut yam large piece.
  • Soak in lime water .Drain the water.And keep.Washed channa dal
  • Take a prassure cooker put the washed channa dal,yam piece,red chilli powder,salt,chopped garlic. Add 2 cup water cook for 10 - 1.5 minutes ,donot close the lid,the yam well cooked.Removed and mashed it wery well
  • Heat oil in a pan add mustard seeds curry leaves,broken chilli.Pour over the mashed yam ,
  • Garnish with coriander leaves and serve hot..
YAM MASIYAL-2
Ingeredients
200 g yam
Tamarind 20 g
1 onion (chopped finely)
1 green chilli
1 T sambar powder
arhar dal 1/4 cup.
1 red chilli whole
1/4 t Fenugreek seeds
a pinch of turmaric powder
1 t arhar dal
few curry leaves
1/4 mustardseeds
salt to taste
Method
  • Cut yam large cubes and washed.
  • boiled the yam and mash them well.
  • boil the dal and mash tham well.
  • Extract tarmarind juice in 1/2 cup water.
  • Mix the dal and yam
  • Put in prassure pan cooked with salt, water,turmaric powder,sambar powder.,turmarind juice,cook for 5- 8 minutes.mix well.
  • Heat a oil in a pan add mustard seed,Fenugreek seeds,chopped green chilli,curry leaves and broken red chilli.Pour over the cooked mashed yam .And let cook on low fire for few minutes,till it thick.
  • Garnished with finely chopped onion and coriander leaves.


YAM KOFTAS
Ingredients
300 g yam(suran)
1 potato
50 g peas(boiled)
3 t gram flour
2 bread slices
1/2 piece ginger
3- 4 cloves garlic
1/2 t pepper powder
1/2 t redchilli powder
1/4 t termeric powder
1/2 t amchur powder(mango powder)
1 onion
1/4 t cumin seed
1/4 cup curd
2-3 tomato
2 green caramoms
4 t ghee
salt to taste
METHOD
Remove the skin,yam and potato and cut and then boil and mashed it.Boiled the peas
Take the bread soak in water and squeezed. Add mashed potato,mashed yam,bread,and gram flour mix .And add the redchilli powder,turmaric powder,pepper powderand salt mix well and make balls.(round or oval shaped yam balls.Make batter of flour and dip the ball in it and deep fry in oil until brown ,fry all the balls

Make gravey
  • Chopped onion,tomato,green chilli,,and garlic.
  • Heat oil in a pan fry chopped onion and carlic until light brown.
  • Add little water ,salt,cook till the onion is tenter and add the chopped tomato,red chilli powder,cumin seeds,green caramoms,mango powder and curd cook for few minutes( add water if requier), stir it untill it becomes a thick gravey and add water cook for anthor 8-10 minutes.remove from fire, add boiled peas, the yam balls .keep for 4-5 minutes.
  • Serve hot garnish with coriander leavs
yam korma
Ingredients
yam(suran or zimikand)
50 g shelled peas
1 onion
5 -7 cloves of garlic(crushed)
1 piece of ginger(crushed)
1 black cardamoms(split)
1 small stick cinamon
4 cloves
2 tomotoes
1/2 turmaric powder
1 t redchilli powder
1 t coriander powder
2 t pappy seeds
2-3 t fresh coconut
salt to taste
METHOD

  • Cut the yam cubes.(if useing yam any gravy or korma it is soak the salt and lemon or curd water and dry, to lightly saute or fry them in a oil before use.
  • boiled the fried yam and peas.
  • soak pappy in warm water few minutes and grind a paste with coconutes
  • crushed the ginger ,garlic.minced or grate onion,,chopped tomatos.
  • heat ghee in a pan add the onion fry for while and add the garlic ,ginger ,cloves ,cardamoms and broked cinnamon, fry few minutes
  • stir ,add chopped tomato,fry for a while and add turmericpowder, redchilli powder,,coriander powder stir well.
  • add the pappya coconut paste and add the salt fry few minutes cook till the oil separates.now add the boiled yam and pease mix 2 cup of water and let come to boil them in a simmer for 10 - 15 minutes till the vegetable tender.
  • add the curd can be added to thicken the gravy or add little lemon juice if you want.
yam fry -2
Ingeridient
500 g yam(suran,zimikand or sweet potato)
5 -8 red chilli whole
3-4 cloves
1 . t coconuts
salt to taste

METHOD
  • cut yam slice or cubes,wash and soak in a salted curd for few minutes and remove,
  • soak the red chilli 5-10 minutes
  • grind the soaked redchille,with coconut,salt and garlic .paste finely
  • appley the yam . marenate for few minutes
  • heat oil in a pan and add the marenate yam and stir for few minutes.mix 2 cup of water and let it come to boil, and then reduce the heat and simmer for 10 -1 minutes till the vegetable are tender,and the water evabarate,
  • serve hot garnish with grated coconut and coriander leaves.
