100 G Arhar Dal

salt to taste

2 Drumstick

3-4 small brinjal

4-5 small onion

3-4 baby onion (Madras onion)

2 tomatoes

1/4 t turmeric powder

3 t coriander seeds

3-4 red chilli (whole)

1/4 t Fenugreek seeds

1/4 t jeera

1 t urad dal

1 t channa dal

25 g fresh coconut

3-4 pepper corns

1 green chilli

30-40 g tamarind

1/4 T Asafoetida
1/2 t mustard seeds
few curry leaves
salt to taste
Pick and wash the arhar dal,

(soak for 5- 8 minutes.Soak the dal to reduce cooking time .)

  • Soak the tamarind in 1/2 cup of water and take out pulp.keep the tamarind juice.
  • Heat 1/2 t oil roast the coriander seeds first ,fengreek seeds(fried golden brown),urad dal,channa dal,and whole red chilli,Roast a little and remove ,add 2-3 pepper corns and jeera,and grind the above masala paste
  • grind the coconut fine paste
  • wash and cut the drumstick 2 inch length and cut the brinjal lengthwise.soak the vegetable in a salt water.
  • chop the small onion and tomatoes
  • add the dal and water(5-7 time more water) in a heavy bottom pan ,add salt,turmeric powder, pinch of asafoetida and few drop of sesame oil. Stir.Bring it to boil the dal and continue cooking on slow fire till the dal tender.
  • add the drumstick and brinjal to the cooked dal and cook till half done,
  • add the masala paste to the dal and add the few chopped onion ,one green chilli and tomatoes,continue cooking.
  • when the vegetable are cooked add the tamarind liquid,adjust consistency,bring to boil and simmer for few minutes.Remove.
  • heat oil and add the mustard seeds ,when they started cracking add asafoetide,few fenugreek seeds,one whole red chilii,few baby onion fry for a minute the onion get golden brown add curry leaves and fresh coconut paste and add to the cooked sambar ,cook for anther few minutes simmer ,
  • serve hot garnish with chopped coriander leaves,


(making sambar in a pressure cooker)

1/2 t redchilli powder

1/2 t coriander powder

1/4 t Fenugreek seeds

1/4 t jeera

1/4 t urad dal

1 whole red chilli

1 whole green chilli

2 onions

3 tomatoes

one walnut sized tamarind

1 carrot

few beans

1 drumstick

1-2 small brinjal

20 g bottle gourd

few curry leaves

few coriander leaves




  • Pick and wash the arhar dal and soak 5 minutes.

  • Add 3-4 cup of water and put dal it in the pressure cooker ,boil till tender ,cook for one whistle and then leave simmer for anther 5 minutes or 2-3 whistle.

  • And then leave cooker closed till the pressure comes down.

  • Remove. Add some water ,salt,turmeric powder.stir

  • Prepare vegetable. Chopped onion,tomatoes.Cut vegetables small pieces.

  • Soak the tamarind in 1/2 cup of water and take out of the pulp.and keep the tamarind liquid.

  • heat 2 t oil in a pan fry the muster seeds till they cracked.Add asafoetide ,urad dal,fenugreek seeds,jeera, 1 whole red chilli,1 whole green chilli ,curry leaves fry for while and add chopped onion fry it golden colour.

  • Add the vegetable fry for a minutes add little oil and salt . cook till the vegetable tender. add the tomatoes ,red chiil powder,coriander powder,stir cook for simmer .till the vegetable cooked add the tamarind liquid,cook for simmer,the vegetable well cooked add the boiled dal ,Adjust desired consistency. .bring to boil.continue cooking for few minutes.remove

  • serve hot garnish coriander leaves

When making sambar required vegetables are drumstick,brinjal,beans,ladiesfinger,onion,tomatoes,pumkin.tinda,snake gourd,radish,turnip,kovai kai,madras small onjon,bottle gourd and potatoes as desired,

Preparation dal is arhar dal and moong dal.

The dal cooked not properly you soak over time add sesame oil.

use the vegetables ladiesfinger, onion and radish, first saute in a little oil and cook this vegetable.
