COCONUT RICE


COCONUT RICE
Ingredients;
1cup basmati rice
1/2 cup fresh Grated coconuts
1 cup coconut milk
1 cup water
1 cinnamon stick
1 small fresh ginger(1 tsp)
1/4 t sanufe
1 small onion
2 cloves
2-3 t ghee
1 small bay leaves
few curry leaves
2-3 green chilli
4-5 cashewnuts
salt to taste
METHOD

  • Clean and wash the rice and soak few minutes in water and remove the water and keep aside
  • Chop the onion ,and ginger very fine piece and slice the Green chilli long wise .
  • Heat ghee add saunfe ,cinnamon stick,cloves,and bay leaves fry few minutes
    Add green chilli ,chopped onion fry the onion get brown in colour and add curry leaves and chopped ginger
  • Now add the fresh Grated coconuts fry few minutes add little ghee and salt and a pinch of sugar and soaked rice fry few minutes and keep aside .
  • Pour 1 cup water and 1cup coconut milk into pressures cooker and bring to boil the water and add the rice mixture ,Bring to full pressure on high heat the steam comes put whistle and Reduce heat and cook 1 whistle
  • Remove cooker from heat allow to cool naturally
  • open cooker add fried cashewnuts
  • serve with curd ,raitha or boiled egg.


COCONUT RICE -2

Ingredients

1 cup basmati rice

1 cup fresh grated coconuts

1 cup coconut milk

1 green chilli

1/4 t mustered seeds

2 t urad dal

2 t channa dal

2 red chilli whole

a pinch of asafoetide

5-8 cashew nutes

few curry leaves and coriander leaves

METHOD

  • Add 1 cup water and 1 cup coconut milk ,1/2 t ghee and 1/4 t salt in the rice and cook the rice in a rice cooker
  • spread on a plate and cool and keep aside
  • Heat little ghee fry the cashew nuts and keep aside ,and fry 1 t urad dal 1 t channa dal and 2 red chilli fry keep aside
  • Take the red chilli and fryed uraddal and channa dal should be fried and powder it keep aside
  • heat ghee add mustard seeds when they cracked add uraddal,channa dal,a pinch of asafoetide ,1 redchilli ,whole and 1 green chille fry for few minutes and add curry leaves and simmer the fire and add 1 cup fresh grated coconuts and fry few minutes add 1 t ghee.Remove from fire.
  • Now add the cooked rice and fry ed cashenutes.
  • sprinkle the redchill ,uraddal powder over the rice and mix well and garnish with curry leaves and chopped coriander leaves
  • serve with papadum or curd
