BRINJAL DISHES







BRINJAL
Brinjal is comman food in India.it known as eggplant. Hindi it Bangan,Marati- vange,Tamil Kathirikai.Telugu venkaya.Other name Egg plant,Hingoli,Ringna,Bataun,Bandane.

It is 92.4 is moisture.this vegetable available in all seasons.
In south india they use in many variates. you make baigan and drumstick sambar it realy a good taste.kathirika kuddu,Ennai kathirika curry,kathirika poriyal,kathirika kara kozhambu,kathirikai rice,kathirika chutney,kathirika bajiji.kathirika gotsu,kathirika puli pasati,kathrika therakal,is common in south Indian food.
Stuffed brinjal,brijal bhurtha ,brijal pakoda.common in North india favorites.
you prepare fish curry,or dry fish curry add brinjal it give good taste.and you add it in any pulses and legumes it give also good taste.
Cut the brinjal keep in it a bowl of water to prevent turning brown in colour and bitter.

Select young brijal the petal of the brinjal is fresh and green and thick.the thin and dark brown is not good for taste.and it look very tender.Freash brinjal is alwayes good and taste for any curries.

STUFFED BRIJAL

Ingrediendients
300 g brinjals(long)
1/4 t turmeric powder
1/2 t red chilli powder
1/2 t dhania powder
1/4 amchur powder
1/4 garam masala powder.
1/4 CUP WATER
oil 1 t
salt to taste

METHOD

WASH THE BRINJAL AND WIPE AND DRY.

  • SLIT THEM LENTHWISE
  • TAKE A SMALL CUP. MIX ALL THE INGREDIENTS WITH SOME WATER.MAKE PASTE.AND FILL IN TO THE BRINJALS.
  • HEAT OIL IN A PAN AND ADD BRINJALS ONE BY ONE AND MIX ,COOK ON MEDIUM FIRE TILL THE BRIJAL TENDER.IF NECCESSARY ADD A LITTLE WATER.AND WATER DRIES UP.

Brinjal poriyal

Ingredients.
300 g brinjal(longwise)
1 t mustared seeds
1 red chilli
1 t channa dal
2 onion
few curry leaves
1/4 t urad dal
2 t of coconut powder

Method.



  • Wash and cut the brijal in long wise .keep in a bowl of water to prevent black or brown.
  • Chopped onion Finley.breake the red chilli 2 piece
  • Heat oil and add mustard seeds to the hot oil.when that start cracking add channa dal,urad dal,red chilli,salt and onion curry leaves.fry a little.
  • Add brijal and fry the oil for few minutes .It half Done add little water. cook for few minutes. the brinjal tender and soft remove.
  • sprinkled the coconut and serve.

BRIJAL GARA PORIYAL

Ingredients.
200 g brinjal (small size)
1 t musterseeds and urad dal.
1 t red chilli powder.
salt to taste
water

Method
Cut the brinjal in long wise



  • Heat the oil and add the muster seeds.when thay started cracking add urad dal .
  • Add the brinjal fry for few minutes. the brinjal cook in the oil. Add red chilli powder mix well .The red chilli is speard all the brinjal. add salt.
  • Spinkled the water every few minutes, donot pore the water.add water little by little .cook in slow fire.
  • The brinjal cook tenter.and smoth remove and serve.

Brinjal bhurtha
Ingredients
Medium round brinjal(400 g)
Tomato (chopped)
Oinon
Ginger 1/2 '' small piece
2 small green chilli
1/2 t red chilli powder
1/4 t garam masala
few coriander leaves
salt to taste

oil 2 t

Method



  • Take little oil in hand speart the oil in the brinjal.
  • Roast the brinjal on open flame or bake in an oven till soft and browened in colour from out side.Put in the runing water peel and remove the skin. and mash well.
  • Chop oinon,ginger,and green chilli finley. and fry lightly in hot fat.
  • when onion cook in slightly browen.add chopped tomatoes and seasoning and mix well.
  • Add the mashed brinjal and mix well. contiue to fry till the mixture blends and fat separates out.
  • serve hot sprinkled grammasala and chopped coriander leaves .

BRIJAL BAJII

INGREDIENTS
200 g brinjal
1-T red chilli powder
salt to taste
FOR BATTER
1/2 cup basan
WATER
soda a pinch
3 T rice flour and maida
salt to taste
1/2 t red chilli powder
salt to taste

Method

slices the brinjal thinly.

spinkeled the red chilli and salt

Make batter

Take a bowl make a thick batter of besan mixed with seasoning,soda,and water(rice flour if added will make the bajjii crispier)




  • Heat oil in a karahi in smoking point.
  • Dip each piece of brijal in to the batter and deep fry at a time on medium heat ,turning or twice till golden brown in clour.
  • Drain on brown papper and serve with coconut chuney.

BRINJAL TARMARIND GOTSU

INGREDIENTS
1 round brinjal medium size
1/4 t mustered seeds
1/4 t urad dal.
1/4 arhar dal
tamarind 10- 15 g
asafoetide a pinch
4 red chilli.
1 small onion finley chopped.
few curry leaves
salt to taste

Method

  • Extract tarmarind juice in 1/2 cup of water.
  • Roast the brijal on an open flame or bake in an oven till soft and browned from out side
  • Peel and mash well.
  • Heat the oil add mustard seeds when they stat crackling add hing,uraddal,arhardal,redchilli,salt and the tamarind juice.bring to boil for 5-8 minutes.
  • Remove from fire and cool it , add the brinjal .mix well.
  • serve hot sprinkling chopped onion and curry leaves.

BRINJAL RICE

Ingredients
1 cup rice
200 g brinjal (small young ones)
4 red chillis
1 oinon
1 stick cinnamon
3-4 fried cashew nuts
1/2 t coriander seeds or coriander powder
1/4 haldi powder
1/2 uraddal
1/2 channa dal
a pinch of asafoetide
1/4 musterseeds

Method

Prepare rice as for boiled rice and cool.



  • Chopped brinjal very small cube size.Chopped onion.
  • Heat oil in a pan add corinder seeds,uraddal,channadal,red chilli,hing, 1 /2 stick cinnamon and salt fry for 2-3 minutes.
  • Remove from flame this masala. cool and powdered this masala powder.
  • Heat oil in a pan add mustard seeds 1/2 stick cinnamon .when they splutter add the chopped onion.onion became brown add chopped brinjal,salt,and turmaric powder(haldi).mix well cook for 5- 8 minutes. the brinjal cook in the oil only .donot add any water.
  • This brinjal cook in slow flame. when the brinjal cooked add the powder masala.mix well.
  • Add the rice in to the cooked masala brinjal
  • Garnish with fried cashew nuts.
Brinjal raida(.kathirika pachadi)

Ingredients.
1 big brinjal

1/2 cup curd
1/4 t urad dal
1/4 muster seeds
1 red chilli
asafoetide a pinch.
salt to taste
Method



  • Roast the brinjal on an open flame or bake in an oven till soft and browened from out side.
  • Peel the skin and mash in hand well.
  • Beat the curd well till it is smoth and without lumps
    Heat oil in a pan ,add mustard seeds .when they splutter,add uraddal,red chillis,asafoetide,and fry for two minutes.
  • Add the mashed brinjal.
  • Cool and add the curd. mix well.

BAKED BRIJAL

Ingrediens

1 medium round brinjal(300 g)

2 t oil

salt to taste

2 t tomatoes souce

2-3 t tomato puree.

25 g cottage cheese

1/4 t red chilli powder

few ajwain

METHOD

  • Slice the brijal
  • Heat fat in a pan
  • And sperad the brinjal slice over the hot oil
  • Spinnkle litte salt,tomoto puree,red chlii powder,and ajwain.
  • And cook for few minutes
  • Taste and if bitter,or sour ,sprinkle a t fo sugar
  • In a greased baking dish,make layers of brinjal and tomato sauce.
  • Cover with crumbled cottage cheese and bake in a hot oven at 400f - for 5- 10 minutes
